Make the perfect barbecue patties with the use of fresh free-range chicken and key complimentary ingredients that are absolutely delicious.

Theo's Tips and Facts

• When choosing chicken look for a pinkish coloured meat and avoid any chicken with a cloudy or watery appearance. Chicken that is watery may have had water added.
• Your local butcher can make up chicken patties for you including chicken mango patties available from Melville Heights Meats.
• Ian uses a combination of ingredients such as breadcrumbs, eggs, parsley and mango for a tropical flavour twist.
• Cook your chicken patties for 2 to 3 minutes on each side.
• Theo uses grease paper to cook the patties to avoid burning the sugars that will sizzle out of the mango patties. Always place oil on the meat and not on the grill when cooking on the BBQ.
• For something different use edible flowers as an alternative to lettuce, edible flowers are similar to the taste of rocket for pepperish flavour
