Christmas ham has a very European flavour. In WA, the Princi family has been curing ham for over 25 years. They have a range of different hams for the festive season that can be purchased ready to serve or ready to cook. Neville shows you how to prepare an exotic glazed ham for the family to enjoy at Christmas.

Glazed Mango & Honey Leg Ham

Ingredients
200 mL 100 % Mango Puree
100 g Honey
100 g Raw Sugar
1 Princi Leg ham of your choice
(Semi Boneless & Festive work well)

Method
Heat ingredients in a saucepan until sugar is dissolved.
Remove from heat.
Pour into airtight container and store in refrigerator.

To Glaze Ham
Preheat oven to 180C
Take skin off ham
Score the fat of the ham with 1cm deep cuts
Place ham in oven dish
Brush glaze over ham
Sprinkle handful raw sugar over top of ham
Bake in oven for 35 50 mins or until ham begins to turn brown
Remove from oven and pour juices into a separate container
Pour juices back over top of ham
Continue baking until ham is heated through
