Neville?s Barramundi Special
Ingredients
1x 2kg Drover?s market barramundi fish
1x big banana leaves,
100 ml Anchor Verjuice,
A sprinkle of cracked Spencer Herbs sea salt and black pepper corns
10xfresh slices of lemon, 5 to 6 toothpicks
Sauce
? cup of fresh squeezed lemon,
Chopped Jalapenos,
Fresh chopped Corriander,
100 ml fish Sauce
Method
- Place barramundi in banana leaves, apply anchor verjuice, sea salt and black pepper corns.
- Place sliced lemons on top of fish.
- Wrap up fish in banana leaves and close with toothpicks.
- Cook on hot barbeque on the lowest setting for 45 minutes.
- Check fish periodically.
- Squeeze fresh lemon in small bowl, mix in with chopped jalapenos, fish sauce and fresh coriander.
- Pour sauce over fish when ready and serve with a lovely glass of chilled Western Australian wine.
