Creating a two dimensional shape and tying down the branches to the wire frame are the main aspects of pruning Espalier trees. The best way to prune trellised and Espalier trees is to pull the branches down and tie them to the wire loosely. After the branch has been held in a new position for a few months of the growing season it tends to set.  You can often go a second time to create an even more extreme angle.  Any growth that can’t be brought into line can be trimmed back to a main stem.  It is very important that any cuts be made with sharp pruners so the risk of disease entry is minimized. The main goal is to have main branches running out horizontally with short spur like growth coming off this producing the flowers and fruits.
